Ingredients

  • 250g Halloumi block
  • Olive oil 2 tbsp
  • Capers 1 tbsp
  • Pitted black olives 3 tbsp
  • Vine ripened tomatoes 4
  • Lemon juice 1/2
  • White wine vinegar 1tsp
  • Fresh Basil

Method

  • STEP 1
    Cut the Halloumi into blocks about 2cm x 2cm x 1cm
  • STEP 2
    Coat / Spray grill pan with olive oil and grill the halloumi lightly on both sides
  • STEP 3
    Chop tomatoes and mix Halloumi with all other ingredients
  • STEP 4
    Garnish with the fresh basil
  • STEP 5
    Serve at room temperature
