Halloumi Tomato Salad

Ingredients
- 250g Halloumi block
- Olive oil 2 tbsp
- Capers 1 tbsp
- Pitted black olives 3 tbsp
- Vine ripened tomatoes 4
- Lemon juice 1/2
- White wine vinegar 1tsp
- Fresh Basil
Method
- STEP 1Cut the Halloumi into blocks about 2cm x 2cm x 1cm
- STEP 2Coat / Spray grill pan with olive oil and grill the halloumi lightly on both sides
- STEP 3Chop tomatoes and mix Halloumi with all other ingredients
- STEP 4Garnish with the fresh basil
- STEP 5Serve at room temperature
