Ingredients

  • 400g green beans, trimmed and halved
  • 3 tbsp olive oil

  • 2 x 400g can chickpeas, rinsed and drained
  • 1 garlic clove, roughly chopped
  • 7 sundried tomatoes in oil, drained
  • 2 whole roasted red peppers from a jar
  • 1 tbsp sherry vinegar
  • 200g pack feta cheese, broken into chunks

Method

  1. Heat oven to 200C/180C fan/gas 6. Spread the beans onto a baking tray, season and drizzle over 1 tbsp oil. Roast for 10 mins until lightly charred. Tip into a bowl with the chickpeas.

  2. In a food processor, make a dressing by whizzing together the garlic, sundried tomatoes, peppers, vinegar and the remaining oil. Season, stir into the beans with the feta and serve.

really delicious, easy & quick - wasn't sure about the roasted beans, but they were delicious (I used frozen beans). Didn't have any sherry vinegar, so used some spiced cherry vinegar - dressing was superb.

Exploding with flavour - absolutely delicious! Added half a tsp of sugar and a little crushed garlic to the sun dried tomatoes for extra kick. Amazing recipe!

Cooked the beans exactly as the recipe - delicious; a new experience. Living on my own, adjusting the recipe was easy, except trying to scale the dressing down to a ½ size, I thought it a little dry, so let it down with a drop of water. This worked well. Overall, superb. It will definitely feature again

This was really lovely - light and tasty. I made it slightly differently to the recipe. I boiled the green beans, drained then stirred the chickpeas in. After making the dressing, I stirred this in over a low heat along with the feta. Absolutely lovely. One for the binder!

WOWZERS!!! This salad is completely delicious. I used to make a sauce similar to this for a morrocan chicken recipe, which had a teaspoon of sugar added, so I put about 1/2 a tsp of sugar in the blender with this recipe also. I was making it in a bit of a rush so couldn't be bother to put the beans in the oven and just blanched and refreshed them on the hob instead. Will definitely do again!!
