Method

  1. Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add bacon and mushrooms to pan, then fry until golden, about 3 mins. Add peas, garlic and ginger, then cook for 1 min.

  2. Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.

Tasty and good. Such an easy way to use up leftover rice. Something about having fresh ginger in it makes it seem more special than it is!

Great midweek meal - it is quick to prepare especially if you buy the ready cooked packs of rice. I cannot eat egg so I cook the recipe without it and remove my portion. Then I add the egg at the end (just before soy sauce) and stir it through and coat all of the ingredients. That works fine.

The flavours in this recipe are really nice - everything works well together. It is easy to tweak as well depending on what you have to hand. Would definitely recommend for a tasty, simple supper.

Made this for the family tonight, not me as I don't eat meat. I added onions and chicken instead of bacon. Big thumbs up all round. This is the best website for recipes :-}

Great for using up left-overs and can be easily tweaked to use up what you have left. I didn't have peas so used sweetcorn, very nice indeed.

Cooked the rice specially in strong vegetable stock so it took longer than 12 minutes to prepare, but a lovely, easy meal. The ginger makes it really tasty.
