Method

  1. Heat the oil in a large pan, fry the onions for 5 mins until golden and softened, then tip onto a plate. Add the chicken breasts, browning for a few mins on each side, then stir in the balti paste, quinoa and onions. Sizzle for a few mins, then pour in the tomatoes and stock and give everything a good mix. Bubble for 25 mins until the quinoa is tender and saucy.

  2. Stir in the cashews and most of the coriander with some seasoning, then pile into bowls and scatter over the rest of the coriander to serve.

Really nice and easy to make! Not the best curry, but still nice! I've made this three times now! Yum yum! Oh and Quinoa is great! I don't think it's a desired taste really? ;-)

we all enjoyed this, I think the sauce with anything would be very nice. Recipe to repeat in our house and very little washing up for the dishwasher.

This was very tasty and I would definitely have it again although I agree with the other comments about there being too much liquid left at the end. I would use less stock next time. I followed a few of the other pieces of advice by removing the chicken and then continuing to simmer for a while longer to reduce the liquid and adding some frozen leaf spinach and roasted red pepper. I also chopped the chicken into pieces and the whole dish seemed to go much further. Very filling and great for next day's lunch too!

Excellent, really easy, tasty and very filling eaten with naan bread. I am vegetarian so I used quorn pieces instead of chicken and it was delicious. Good meal to cook when you get in from work because it so simple and the family love it.
