  • 6 tbsp mayonnaise
  • 2-3 tsp mild curry powder, to taste
  • ½ tsp ground cinnamon

  • 1-3 tbsp sultanas, or to taste
  • 500g shredded cooked chicken

Method

  1. Mix the mayo, curry powder, cinnamon, chutney and sultanas together and season with black pepper. 

  2. Add the shredded chicken and stir to coat in the sauce. Stir in 2 tbsp water to loosen if needed, then season and serve as desired.

Love this recipe, so quick! I did not have any sultanas so I added chopped dried apricots which I think worked well.

i thought this recipe was very nice i used some cooked chicken from the left overs from sunday roast . i did add some cellery and almonds for added crunch and had a jacket potato with it

Thank you for a simple coronation chicken recipe, i made it for my daughters sandwiches for school. I added some fresh herbs, other than that stuck to your ingredients.
