Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.

  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

Frozen cod doesnt taste that much...the tomato sauce was delicious but not the code...so the first time I made it was nt that good. the second time, in addtion to the ingredients above, I put some red wine and capers as well...and left in the oven 40 minutes more...then it was muuuch better!

Who would have thought that white fish could taste so good with so few ingredients?! Really low fat and quick and easy to make. I used chunky cod fillets that you buy from the freezer section of the supermarket and it worked very well. I keep a variety of fresh herbs in the freezer - they store well and are to hand when you need them. I served with new potatoes but would also go well with rice or pasta. The sauce isn't enough for 4 people but may stretch to three.

As someone who sometimes struggles to think what to do with cod, this is a great recipe. Lovely fresh flavours and very quick and easy to make.

What a great recipe and it’s so simple. Used some cod loin that I had bought from dear old Sainsbug's fish counter on spec and frozen and was just fabulous. Served it with Silvana's Mediterranean & basil pasta as recommended and the combination was a winner.

This was really tasty and easy to make, will be doing this again and again. Just not the right quantities of sauce - I made this for two and it was right for us, wouldn't be enough for four. But definitely really good - the thyme is lovely.

Well, to be honest, the resipe was alright, but nothing spectacular. Yet, I have to admit that I'm not a big fun of canned tomatoes in general, so maybe that's why this dish didn't blow my mind. But it's definitely wityh trying!
