Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.

  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

Great!! A simple easy quick dish with ingredients I do actually have in the cupboard!! I think I will add some cherry tomatoes during the oven cooking next time for that sweetness; perhaps too much soy sauce (but I did use dark soy). This will become a regular dish for me.

Really enjoyed this for my first attempt at cooking fish. I served it with some boiled potatoes. Next time I think i will cook a little more veg with it as it wasn't very filling. Also cooking fish from frozen took a little longer so the sauce started to reduce a bit too much. I wrote about it here: http://clarebeedo.wordpress.com/2014/01/03/smells-a-bit-fishy/

The whole family enjoyed this one. I even left out the soy sauce so i could blitz for the baby (we added it afterwards for the rest of us). Served with crispy potatoes, a great way to up the fish quota.
