  • 400g can chopped or cherry tomato
  • 200ml beef stock
  • 100g pitted black olives in brine
  • 500g pack mushroom, thickly sliced

  1. Using kitchen scissors, snip the sausages into meatball-size pieces. Heat a large pan and fry the pieces in the oil for about 5 mins until golden all over.

  2. Add the oregano and garlic, fry for 1 min more, then tip in the tomatoes, stock, olives and mushrooms.

  3. Simmer for 15 mins until the sausages are cooked through and the sauce has reduced a little. Serve with mashed potato or pasta.

I have made this a few times now. It really makes u appreciate the different quality in sausages. I like to use olives stuffed with jalopenos.

I cooked this tonight for our dinner, omitting the mushrooms as I can't eat them. For so few and simple ingredients, most of which will be in your store cupboard, this was very quick and easy to make and everyone said how tasty it was. It smells wonderful, while it's cooking. If you aren't feeding small children, you could add chilli to spice it up a bit or separate it into two small pans and add chilli for the adults. Will definitely be cooking this again as a quick after school supper. 9 out of 10 from my kids!!

Made this earlier today as it looked cheap and easy to make! WOW! What a recipe. One pot, simple to make, super low calorie if you buy (like i did) some healthy sausages! It makes 4 decent portions, which i've tubbed up ready to add some veg and potatos too as evening meals for my next 4 late shifts. I wasnt expecting it to taste as good as it does, really rich and strong flavours from very simple and minimal ingredients. Will be making this again and again i bet!
