Method

  1. Heat the butter or oil in a large pan, then add the garlic and soften for a few mins over a low heat. Add the sun-dried or SunBlush tomatoes, canned tomatoes, stock, sugar and seasoning, then bring to a simmer. Let the soup bubble for 10 mins until the tomatoes have broken down a little.

  2. Whizz with a stick blender, adding half the pot of soured cream as you go. Taste and adjust the seasoning – add more sugar if you need to. Serve in bowls with 1 tbsp or so of the pesto swirled on top, a little more soured cream and scatter with basil leaves.

Yes! At last a tasty and simple tomato soup that is very similar to a well known-brand. I did need to add more sugar than the recipe suggests and I think it's due to me using sun-dried tomatoes instead of sun-blushed, which can be a bit 'tartier'. It is deceivingly filling, therefore the kids left about a third of it. Will be doing again and hopefully with sun-blushed tomatoes :-)

Made this in the slow cooker. Used about 6 large fresh tomatoes, which I chopped and added to the chopped garlic & sundried tomatoes. These had been fried in butter first. 5 sundried tomatoes seemed a lot so didn't use them all as I thought they'd overpower the soup. Cooked for about 3 hours on the high setting then blended. Didn't have sour cream so added a good spoonful of creme fraiche then blended again. The result was gorgeous. I've never made tomato soup before so was impressed with this recipe. Will def make again.

This is such a gorgeously rich and rustic soup! I am so proud I was able to make food that tastes this good from scratch! Thanks so so much for the recipe! Easily the best tomato soup I have even made or eaten! I didn't bother with the swirl of cream to finish so I could add a few Italian croutons - favourite dinner in a long long time!

This is the best tomato soup I've ever made (I've tried at least 10 different recipes throughout the years). It has the same lovely consistency as a certain beloved tinned tomato soup, but it is much more intense in flavour.

Delicious - this one's a keeper. I used almost double the sundried tomatoes because I had some to use up and I didn't use pesto, just whizzed in a good handful of fresh basil leaves. The recipe with these tweaks still produced a lovely rich tasting soup and I know I will make this time and time again.

Delicious! This makes enough for 6 servings, perfect for the next couple of lunches. It's so creamy and lovely and tastes absolutely delicious. Highly recommend.
