Ingredients

  • 1 tbsp groundnut oil
  • 5 cloves of garlic peeled and chopped
  • 1/2 chopped medium onion
  • approx 20 okra split in half
  • 2 tbsp chicken stock
  • 1 green chilli deseeded and chopped
  • 1/2 tsp ground coriander
  • 4 tomatoes deseeded & cut into slivers

Method

  • STEP 1
    Heat oil over high heat & add garlic, fry until golden then set aside
  • STEP 2
    |Melt butter, cook onions until slightly golden then add okra
  • STEP 3
    Fry at a medium heat then add the garlic together with the stock, chilli, coriander & tomatoes
  • STEP 4
    When the mixture is sizzling, transfer to a plate and serve
