  • 125g ball mozzarella, torn into small pieces

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers


  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

Yummy!! I used Boursin as suggested and it worked really well. Made a fab quick and easy mid week dinner. Served it with crushed new pots and veg. Very pleasant!

really succulent and easy i used light cream cheese and more of a stronger cheddar to give it a bit of bite, was extremely yummy, had with roast potatoes and green beans

Could you bake this on top of "the favourite baked risotto"? Would have the bacon taste underneath and no need to do potatoes - otherwise sounds a little bland without any sauce

When I made this dish as a last minute dinner I omitted the mozzarella as I didn't have any. Tasted really good served with mustard mash. It is a ood last minute dish as the ingredients are usually in the fridge.

Yes - this recipe is most definitely our favourite. Even my son "who doesn't like chicken" can't get enough of it!
