Ingredients

  • 125g ball mozzarella, torn into small pieces
  • 50g strong cheddar, grated

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers

Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

This was just so yummy, all the family enjoyed it. I did one without mustard for my 18 month old for all-round smiles!

Yes - this recipe is most definitely our favourite. Even my son "who doesn't like chicken" can't get enough of it!

I followed suggestions and used Boursin (the one with garlic) instead of mozzarella to mix with the mustard & mature cheddar. I also added a punnet of cherry tomatoes to the baking tray and baked them for the same length of time as the chicken, this added to the sauce. Served with mange tout. Yum! Clean plates all round!

This is one of the best recipes I have cooked in a long time - fantastic as a mid week supper with a plate of salad.

Excellent recipe. Very easy to make & the filling did not spill out loke i thought it would. I used normal back bacon instead of streaky just because i prefer it. Chicken was loveley & moist & the filling was delicious. Will be making again!

The taste of the chicken with the bacon was lovely but i found the mozzarella quite bland and the mustard mixture did spill out. I would make this again but would try using "Boursin" as suggested in some of the other comments.

A superb midweek meal that was quick and easy to make - my husband said it was one of the best things I've made for him! Served with boulangere potatoes, and baby vegetables. Very very tasty and simple.
