  • 125g ball mozzarella, torn into small pieces

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers


  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

I tried this yesterday and it was delicious. The filling is also very good on toast as a variation of cheese on toast. Will definitely cook again.

A very tasty recipe. I stuffed this with boursin garlic cheese too. Glad I did. The family don't like mustard but really flavours the chicken well. I wrap this is parma ham and sprinkle oregano, goes well with baby potatoes and sliced red onion, can put this in the tray at same time - YUM!!!!

I am a veggie, but I don't mind cooking simple meat dishes for my friends. I made this as a Christmas side dish, and it was dead easy, and I am reliably formed that it was very tasty too!

really easy and really tasty. served with crushed olive new potatos and carrots, made too many chicken breasts so just ate one the next day cold and sliced with salad! yum. i used philadelphia, grated mature cheddar and mustard.
