Feta and pine nut salad

Ingredients
- 1 small bag wild rocket
- 1 small pack feta cheese, not in oil
- 20 seedless white grapes
- 3 tablespoons pine nuts
- 1 tbsp balsamic vinegar
- 1/2 tsp dijon mustard
- 2 tbsp olive oil
- sugar
- salt
- pepper
Method
- STEP 1toast the pine nuts in a dry frying pan until golden brown
- STEP 2break, crumble, or cut the feta into small cubes and halve the grapes
- STEP 3whisk the balsamic into the mustard, add a pinch of sugar, season and gradually whisk in the olive oil
- STEP 4roughly tear the rocket, add the grapes and feta, and toss in the dressing. Make a heap of the mixture on each serving plate and sprinkle the pine nuts on the top. Serve with warm ciabatta.
