Method

  1. Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.

  2. Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

I made this for the second time this evening. This time, I baked it (160 fan, 180 otherwise, @ 30 minutes), and it was lovely. When I microwaved it, it just didn't cook properly. I put it in for at least 15 minutes longer than the recipe said, because it wasn't cooked before - the texture was doughy, rubbery as it cooled, and it really wasn't very nice. Maybe my complete lack of experience in microwave cookery was to blame - I'm just glad that I can now remake this, and have a happy, satisfied husband!

Came out perfect! Compliments from picky son and other half. Followed the recipe exactly except I found it needed 9.5 minutes in our 750 watt microwave. At 8 minutes it still had a slightly wet patch on top in the centre. The next time I made it with apple instead of banana and 8 minutes was just right then. Making it with raspberries today (mixing them in after making the sponge bit, and leaving out cinammon).

Found an overripe banana behind my fruit basket and I just made this with half of the ingredients. Cooked 4 min in 700W microwave, came out wonderful spongy texture! Reduced sugar to 35g rather than 50g, sweet enough. Could add some choc chips or flaked almonds maybe. This got to be repeat.

Cooked this with my 7 year old. So easy, fun to make and super quick. What a great standby pudding! I reduced the amount of sugar from 100g to 80g and it was sweet enough.

I used half the quantity of coconut palm sugar instead of the muscovado sugar and it was not overly sweet and the caramel tones were amazing. Bit.ly/1peNMBQ

Very easy and very quick. I just reduced the amount of sugar so that it was not too sweet.

Mine didn't work for some reason?? Must of done something wrong.... such a shame was really looking forward to it after reading all the good comments. I think I will definately try again but might use the oven instead of microwave.

Mine was a bit stodgy - imprecise measurements or cooked too long (6 mins as Richards kakumanu suggests as opposed to 8 mins as the recipe suggests)?

Hi there, thanks for your question. All microwaves vary in power so perhaps it was a little undercooked. Try reducing the time then test with a skewer and add more cooking time if you need to.
