  • 2 tbsp chopped flat-leaf parsley
  • crusty bread, to serve

Method

  1. Heat the oil in a deep frying pan and fry the sausages for 4-5 mins until golden brown. Remove and set aside.

  2. Cook the onion in the same pan for 5-6 mins until softened, adding a splash of water if it starts to catch. Add the chickpeas, tomato sauce and stock and bring to the boil. Return the sausages to the pan, lower the heat to a simmer and cook for 5-6 mins until the sausages are cooked through. Scatter the garlic, orange zest and parsley over the stew, then serve in shallow bowls with crusty bread on the side.

Decided to try this recipe out as although sceptical of the orange and parsley addition I wanted to try something new. It was delicious! I made my own tomato sauce with tinned tomatoes and purée and served it with baked sweet potatoes. The orange, garlic and parsley go really well and give it a fresh taste. I added chilli like others did as we like a bit of warmth. Highly recommended!

Great easy recipe. Didn't have parsley, so added a big handful of spinach to add something green. Don't leave out the garlic and orange rind. This quantity serves 3 people if you don't have bread to mop up the juices.

We all really enjoyed this, although we didn't fancy the garlic topping so didn't bother.

I found this recipe the night before my food shop and had hardly anything in yet I still managed to make a delicious meal that was a hit with the family! I used a red onion , used a jar a bolognase sauce, veg stock, Some chilli flakes and as I had only five large sausages I served with buttery mash. The meal was full of flavour. I always know I'm on to a winner when the kids ask for seconds!

Very hearty. I adapted this quite a lot. I used fresh chilli, paprika and peppers. I didn't use the topping (apart from the parsley) as suggested but put the garlic in with the rest of the ingredients to cook. I also used Toulouse sausages. If you like a good quality sausage it's also good with wild boar sausages :-)

A good recipe, but I came a cropper at the end by being distracted and zesting a whole large orange onto it at the same time as doing something else and as a result, can't really taste anything but orange. Maybe I'll leave that out next time!

Could someone tell me what's meant by ready made tomato sauce, please. Is it passata? Or is it a jar of pasta sauce such as Loyd Grossman? Thanks.

I use a jar of ragu type pasta sauce and its fine. I do add extra garlic and some chili flakes to spice it up a bit

Hi there, thanks for your question. Ready-made pasta sauce would be any tomato pasta sauce, not passata, so you could use one such as Loyd Grossman, or even make your own if you have time.
