Ingredients

  • 2 Kilos marrows
  • 2 carrots
  • 2 potatoes
  • 2 onions
  • few lettuce leaves if you wish
  • 2 chicken stock cubes
  • 1/2 tsp mild curry
  • 2l water

Method

    1. Peel and wash all the vegetables . Cut the ends of the marrows.
    2. Quarter all the vegetables and put in a pot.Add the chicken cubes , curry and water.
    3. Put on cooker and leave it on high flame until it boils then simmer until all the vegetables are tender.
    4. Liquidize the soup in a liquidizer or hand blender .You can garnish with Crotons .

Great way of using up over sized courgettes but dies need to double the chilli powder

Very good, especially since I was using an overgrown courgette. Nice colour. I don't peel the vegetables, especially potatoes which have a lot of vitimens in the skin. I did add one of my home grown chillies.

I did de-seed my marrow. but wow, the lot has been demolished by the kids and wife. Very succesful

Lovely. My nine year old son made this with his home-grown marrow (and some help). We fried the onion first and used a little more curry powder. It tasted great and all the children ate it happily.

No mention of deseeding the marrow? Is it not necessary because the soup is liquidised? Or is it just an omission?
