Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.

  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

Had this for dinner tonight. I added chili flakes, garlic and half a sautéed red onion along with the courgette to the couscous. I also sprinkled the chicken with some fajita seasoning before frying. Delicious!

This dish is so easy and so quick! Looking at the rest of the comments I used a peeler to cut the courgettes into ribbons rather than grated it (far less messy). The only other change I made was using less stock as I felt that 400 ml of stock to 200g of cous cous would have made it far to wet, so halved the amount. Also made sure that everything was very well seasoned. This took me about 20 minutes to both prep and cook and it was really tasty, so will definitely be having it again.

Simple and tasty. I used cauliflower cous cous for the first time instead of normal cous cous and stir fried it along with the courgette (and added garlic and chilli as others have suggested). Worked really well and will do it again.

I sliced courgettes into strips rather than grated them to avoid the soggy results others mentioned. Also cooked it up with garlic, a chili and red onion. Extra lemon juice was added to the cous cous dish. I also sprinkled Moroccan seasoning on the chicken which I oven baked on a bed of cherry tomatoes. And extra lemon juice on this too. Simple and delicious. The family loved it!

I marinated the chicken in a little olive oil, 1 chopped garlic clove, some dried thyme and seasoning. I also fried another clove of garlic with the courgettes to add to the couscous. So easy and very tasty! My picky husband even liked it!

I made this recipe without modifying it at all and it was rather bland. Easy to make and healthy though, next time I'll add some flavours like the previous commentators suggested.

I did this yesterday evening for dinner and it was amazing :) Its very quick to make and it is delicious. I rubbed the chicken breast in olive oil and Lemon & herbs chicken seasoning. Will definitely do this again!

Tried this tonight it was delicious! Added Chilli flakes and Garlic to the couscous mix as suggest below. Made half the recipe to feed 2 and there was still some left for lunch tomorrow... thumbs up!

I didn't add any extras to the couscous, but instead diced the chicken and rubbed in some cajun seasoning. I found this worked really well with the flavours from the couscous and really transformed the dish. Will be making this again!
