Ingredients

  • 250g basmati rice
  • 400g special mixed frozen vegetables
  • a generous handful of raisins
  • 1 vegetable stock cube
  • 2 tbsp korma curry paste
  • a generous handful of roasted salted cashew nuts

Method

  1. Boil the kettle. Get out a large microwaveable bowl and pile in the rice, veg and raisins.

  2. Pour 600ml/1 pint boiling water over the rice mixture and crumble in the stock cube, then stir in the curry paste. Cover the bowl with cling film, leaving a small gap at the side to let out the steam. Cook on full power (850 watts) for 12 minutes – if your microwave is less powerful, add 2 minutes.

  3. Remove from the microwave and stand, still covered, for 5 minutes to complete the cooking – if you don’t let it stand the rice will be too nutty. Fluff up the rice, scatter with cashews and serve.

Wooow, what a dish. I used unflower Seeds instead of cashews, and bulghur instead of rice. Raisins gave unbelievable pop of flavor. This will be often on our menu!

This is super simple to make and very tasty. Make sure you give it a really good stir before it goes in the microwave. We enjoyed it with a couple of soft boiled eggs.

Great dish considering how quick it is to make, you could turn up to a BBQ with this as a cold rice dish and everyone would think you'd made loads of effort.

hi, I have used this recipe since 2002 and find it great. Am now using it again after 4 years, and it is still great.

I used sultanas instead of raisins, jalfrezi paste instead of korma, and cooked it for 14.5 minutes in a 850w microwave. I then put it in the fridge and had it for lunch the next day - was gorgeous!

This recipe was really delicious and yes I also left it a few minutes longer (10 min more). The "special" vegetables I choose were a mix of frozen very affordable Mediterranean roasted ones which are easily available in most big supermarkets. I also found a very good organic, gluten free Korma paste and some very cheap cashew nuts(£0.80 p) at one of the leading supermarkets. So the whole dish cost us less than £6 and feed 5. When I told my children what was for dinner they were very fearful (as I am not a very good cook), but everybody gave a 5/5.

Im not a veggie so grilled a chopped up turkey breast which had been rubbed in curry powder and added to this rice dish. Top stuff no messing about going to local curry shop now. If only I could find how to make the sauce they use id never go again :o)
