  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.

  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

Absolutely love this recipe!!! I added extra chicken and veg ie. green peppers, red peppers, mushrooms and chillis for my own taste. So tasty, healthy and filling!

I used green beans instead of spinach and I added some coconut cream to thicken the sauce.

Made this dish twice in one week! Having never made a curry before it was so easy. I added in creme fraiche at the end to give it a better consistency. Made me want to try more curry recipes because it was like a 'take away'. Yum

A great home made curry - I added some red and green pepper and mushrooms that needed using - very tasty and the sweet poato means no need for rice- served with warmed pitta bread! Will make this again!

Delicious I did not have any organ Josh paste so used curry powder,cumin powder. A good low GI meal minus the rice and nann.
