Method

  1. Prepare couscous with chicken stock, according to the packet instructions. Heat olive oil in a pan and cook the onion for 2-3 mins until softened.

  2. Toss in chicken breast fillets and stir fry for 5-6 mins until tender. Add the blanched almonds and, when golden, stir in the hot curry paste and cook for 1 min more.

  3. Add the couscous along with the apricots and the coriander. Toss until hot then serve with plain yogurt if you like.

I wasn't a fan, maybe I didn't use the right curry paste but it was quite bland and too dry even though I added extra stock when I added the couscous.

nice meal, slightly inappropriate for a night in october, but never mind. I spiced it up a little bit, and put the onions in last, as my other half likes crunchy onions in his food. will make again for sure!

Really quick and tasty. I added about three tbsp of hot water from the kettle to the pan with the curry sauce which stopped it becoming too dry when I added the cous cous.

This was top munch. If you find that your cous cous is a little dry pop in 50ml more stock or so after you add the cous cous in the final stage. Tasty stuff.

Lovely simple dish, i've made this several times varying the curry paste - madras is my favourite! Tastes great hot or cold.
