  1. Brown the mince: Heat the oil in a large, shallow pan. Toss in the onion and garlic and fry until soft. Add the mince and stir fry for 3-4 minutes until browned.

  2. Season and simmer: Tip the tomatoes into the pan and stir in the tomato purée and cinnamon, then season generously with salt and pepper. Leave the mince to simmer for 20 minutes, adding the aubergines half way through.

  3. To serve: Sprinkle the crumbled feta and chopped mint over the mince. Bring the moussaka to the table as the feta melts and serve it with a crunchy green salad and toasted pitta.

This was one of the best, new recipes I've made in a long time. Made it with beef mince, and put the sliced aubergine under the grill before adding it to the rest of the ingredients.

Made this with beef mince and an aubergine, really tasty, needed half the feta cheese amount as that tasted quite strong but a great dish overall, served with rice.

Delicious! I used minced beef and fresh aubergines (cut in cubes and baked in olive oil) and soft feta cheese which I mixed with the sauce, very much recommended!

Really yummy and easy to cook. Full of flavour. I added chickpeas and lamb stock as others recommended and served with toasted pitta bread. Very tasty dinner, would definitely recommend.

As others, I modified this by using fresh aubergines (sliced, brushed with oil and baked), adding a diced courgette, and a lamb stock cube dissolved in 1/4 pint of boiling water. I also left out the mint. It was easy and truly gorgeous!

I didn't have any aubergine so used some grilled peppers - was described as delicious and amazing by my kids!

Cooked it many times and we like it very much (my kids love it). I use fresh aubergine, cut it into slices and bake before adding to the tomatoe sauce.
