Ingredients

  • 250g block halloumi cheese
  • 10 rashers pancetta or smoked streaky bacon
  • 1 tbsp chopped chives

Method

  1. Heat oven to 200C/fan 180C/gas 6. Cut the halloumi into 20 sticks. stretch each rasher of pancetta with the back of a knife, then cut in half. season the pancetta with just black pepper, then sprinkle with the chopped chives.

  2. Roll the pancetta around the halloumi in a spiral and arrange on a baking sheet. Bake for 10-12 mins or until the pancetta is brown and beginning to crisp.

Just looked this recipe again as I`ve been asked to bring something along. So tasty and always popular, easy and not time consuming to make. I always feel the cheese to make sure it is firm before buying.

Made these up with a standard block of halloumi from the supermarket, a packet of smoked pancetta and chives as suggested. A little bit fiddly to assemble, as the pancetta ripped quite easily, but they still looked and tasted fantastic. Easy to make up ahead of time and then bung in the oven to finish off quickly too. Boyfriend was a big fan and will be making again soon.

Very easy and very tasty. I used halloumi with chilli to add a little something. They did not last very long!

I attempted these for a family gathering at the weekend, and it wasn't nearly as easy as it sounds. When I tried to cut the hallloumi into sticks, it crumbled to pieces, and so did the bacon when I tried to stretch it. I ended up with some very tiny ones, and lost patience before I had used all the ingredients. They did taste good though, and all got eaten - if I'd perserved with the rest of it, I think they'd have all gone. I doubt if I'll attempt these again though, unless my gluten free sister is visiting.
