  • about 4 skin-on chicken thighs and 4 drumsticks- buy a mixed pack
  • 6 tbsp piri-piri marinade (you can buy mild, medium or hot)

Method

  1. Heat oven to 200C/180C fan/gas 6. Slash each piece of chicken 3 times, so the marinade can really flavour the meat. Pour over the sauce and leave in the fridge to marinate, if you have time. If not, mix well and arrange, skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220C/200C fan/gas 7 and cook for about 15 mins more until the skin is crispy and golden.

  2. When the chicken is almost ready, heat the oil in a frying pan. Cook the peppers and white parts of the spring onions for 5 mins. Tip in the purée and paprika, stir, then add the rice, breaking up with a wooden spoon so all the grains are coated well. Use a high heat and scrape any that sticks off the bottom so you get some soft and some crispy parts. Heat until piping hot. Scatter the green parts of the spring onion on top and serve with the chicken, and some vegetables or salad, if you like.

Although this is a late response, here is an easy piri piri marinade that I got from a TV programme which I find works well: 1-2 tbsp olive/rapeseed/veg oil Zest and juice of a lemon (or lime) 1 tbsp white wine vinegar 1 tsp smoked paprika 1 tsp oregano 1 tsp chilli flakes or powder (or according to taste) 2 cloves crushed garlic Mix everything together in a large bowl, add meat, cover, then leave to marinate for as long as possible before cooking. I usually use skinless breasts or thighs to make fajitas, however, you can use drumsticks/thighs as in recipe. Hope this helps.

Easy to make and it tastes very good. I agree the rice needs a "little kick".

Delicious as-is but only rated four stars as I felt the "spicy rice" didn't really hit the mark. I'd suggest adding a little fresh chilli (e.g. half a scotch bonnet or similar) to the final puree and paprika stage which will work well with the bell peppers but give a big chilli kick.

I cooked this for friends, it was so easy to make and absolutely delicious. I would recommend seasoning the rice to taste though. Also a sprinkle of chilli flakes on top gives it that extra kick.

Absoultely lovely, the rice is full of flavour and the chicken really soakes up the marinade even if you don't have time to leave it for a few hours, already made it twice since finding the recipe. Easy to make too

you can get the piri piri marinade from most supermarkets. there is a nandos version, which you can get in differing spiciness!
