  • 200g pot half-fat crème fraîche

Method

  1. Melt the chocolate in the microwave for 2 mins on High, stirring halfway through. Meanwhile, stir together the lemon curd and the crème fraîche.

  2. Divide half the raspberries between the baskets, spoon over the lemon cream and top with the rest of the berries. Drizzle the dark chocolate over the tops of the baskets and leave in the fridge to set for 5-10 mins or up to 1 hr.

So easy and went down a treat with my guests. I followed some previous advice and started off with the creme fraiche then added 1 tbsp of lemon curd at a time until I was happy with result. Don't assemble too early or the baskets will go soft. I will definitely make this again.

I did not like it. It was too lemony even though I had followed the advice given in comments to reduce the amount of lemon curd used. It tasted like lemony yoghurts you can get from suoermarkets to be honest. I thought the lemon and raspberries did not go together. Won't try it again I'm afraid.

Yummy!Very simple to make. Went down very well with my guests. Would possibley use less lemon curd next time, maybe a squeeze of lemon juice to make is less sweet but more lemony? Will definitely make again.

Great quick desert to impress. I would definitely advise less lemon curd, I would stir in a tbs of lemon curd into the creme fresh at a time and adjust according to taste. I had lots of broken baskets unfortunately, I am welcome to more ideas on how to use them up!!

yummy! nice and light, i made using crushed ginger snap biscuits in glass ramekins as couldn't be bothered to find brandy snap baskets!

Very simple and tasted great, but because I'd prepared them in advance, the baskets had started to go a little soggy.

Made this for supper last night and it is so light and tasted lovely. Had to make my own brandy snap baskets as I live in France and could not buy them, but it was not difficult. I made everything ready just to assemble before eating, will definitely be making this again.

Delicious. I made my own brandy snaps using the Mary Berry recipe on here, really quick & easy. I also used 300g of creme fraiche to 225g of lemon curd and added some lemon zest to the mixture as the original was a touch too sweet for my taste
