Ingredients
- 1 flatbread, naan or pitta
- Handful of baby spinach leaves
- Half a red pepper
- Half a red onion
- Handful of baby plum tomatoes
- A few asparagus spears
- 100-125gg buffalo mozzarella
- 1 tbsps olive oil
- Salt and black pepper
Method
- STEP 1Place the spinach on the flatbread
- STEP 2Add the chopped peppers, onion and tomatoes
- STEP 3Lay the asparagus spears across the top
- STEP 4Drizzle with olive oil and add seasoning
- STEP 5Bake at 180C/fan 160C normal
- STEP 6Tear over the cold mozzarella to serve
