A quick and healthy pizza, much nicer than shop-bought

  • 1 flatbread, naan or pitta
  • Handful of baby spinach leaves
  • Half a red pepper
  • Half a red onion
  • Handful of baby plum tomatoes
  • A few asparagus spears
  • 100-125gg buffalo mozzarella
  • 1 tbsps olive oil
  • Salt and black pepper


    1. Place the spinach on the flatbread
    2. Add the chopped peppers, onion and tomatoes
    3. Lay the asparagus spears across the top
    4. Drizzle with olive oil and add seasoning
    5. Bake at 180C/fan 160C normal
    6. Tear over the cold mozzarella to serve
