Ingredients

  • 1 large or 2 small fennel bulbs

  • 6 celery stalks

  • 3-4 tbsp fruity extra-virgin olive oil
  • 2 tbsp lemon juice

Method

  1. Very finely slice the fennel bulbs lengthways (a mandolin makes this easier). Cut the celery stalks into thin matchsticks. Scatter the fennel and celery on a large plate or platter, drizzle over the fruity extra virgin olive oil and lemon juice, then season. Scatter any fennel fronds and celery leaves over if you have them.

Never used fennel before so tasted a bit whilst chopping and hated it! Carried on with this recipe anyway and the end result was delicious - the lemon juice and oil really complement the fennel well. I actually polished off the bowl! Next time I might try adding sliced green apple.

This is nice with a packet of cherry tomatoes (halved) and smoked Mackerel mixed in together with the fennel and celery.

Made this as a side dish to pizza and melanzane parmigiana. Chose it because I thought it would be okay to make ahead. Made it 2 hrs ahead of dinner and it was still nice and crisp and fresh.

Used the cucumber as well as the celery and the lemon-infused oil as others suggested and it was very good.

Add some very finely sliced green apples, ( skin on) to this salad for a refreshing alternative. A small handful of cumin seeds adds another dimension. Enjoy :)

Light and refreshing, I was surprised I liked it so much as not really a fan of fennel but the lemon and celery gave it the right balance.

Made this accidentally with cucumber in stead of celery and it was very light and nice.
