  • 1 tbsp Thai fish sauce

Method

  1. Open the coconut milk, pour the thin milk into a jug, keeping back any thick coconut cream. Scoop the coconut cream into a blender. Add 2-3 tbsp of the coconut milk plus curry paste, sugar and coriander stalks and blend to a smooth paste. Heat a wok, tip in the paste, stir fry for 1-2 mins, then pour in the remaining milk from the jug.

  2. Bring to a simmer, then add the prawns and spinach. Cook until the prawns are heated through and spinach has wilted. Add lime juice and fish sauce, then spoon into bowls. Scatter over coriander leaves and serve with plain rice or noodles.

Delicious. Added red pepper, onion, and baby corn and served with rice noodles. Easy and really tasty.

This was my first time making thai green curry. It was delicious! I used sugar snaps and red peppers as well as the baby spinach but otherwise followed the recipe. The peppers added some lovely colour!

I loved this! I used the paste recipe pennyallen posted below, with the addition of some kafir lime leaves, & swapped the standard sugar for palm sugar & this was perfect! It was very summery, fresh and delicious served with some rice noodles it was quick & easy, even after making the paste. This will be regular for me from now on

Quick, easy & tasty - will be making again, great for a mid week treat. We added a whole bag of spinach as we like it, will prob throw in some sugar snaps or something like that next time too

Didn't have any spinach so used green beans from the garden - worked well. This is a great meal, full of flavour and so easy. Everyone loved it!

I'm so excited because I finally managed to make Thai curry (my favourite), this recipe is very tasty and super easy. I put lots of coriander because I love it, and just one and a half tbsp of green curry paste, because I like it mild ... tasted great !
