  • 200ml medium white wine
  • 1 tbsp tomato purée
  • 400g can chopped tomatoes

Method

  1. Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.

  2. Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.

  3. While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

This is delicious. I used sausage meat, added onions, sage and a couple of rashers of bacon I had left over. I didn't have any white wine so used Rosè. You can really mix this recipe up and it's still good.

Nice and easy and very tasty although I made a few tweaks! I baked the sausages first and added them with the tomatoes (used two tins). Fried some courgette and pepper first with the garlic, added some chilli flakes as other suggested, and used chicken stock instead of opening a bottle of wine. Finally, added a grated carrot at the veg stage for sweetness instead of adding sugar. Everyone enjoyed it so will be making again.

So easy and quick to prepare, very tasty too. A perfect dinner particularly for a weeknight.Gave us 4 really good portions. Could probably even feed 5 with this.

Easy and quick recipe - definitely recommend as a mid-week meal! I used 2 tins of chopped tomatoes instead of 1 and also apple juice instead of wine which sweetened it nicely.

Cooked this a few days ago and followed the recipe. I would agree to use an extra tin of tomatoes and maybe half teaspoon of sugar. That said it's a great comfort food standby to put together something filling and tasty. Next time I think i will substitute about 100g pasta with veg for a lighter option. I have three of Jo Pratt's books and her food is really good. Her book "in the mood for entertaining' has never failed me:)

This is delicious - I used Sainsbury's Sicilian sausages and a splash of apple juice instead of opening a whole bottle of wine. I also chucked in some mushrooms for the last 15 mins - lovely.

This is so easy. It's nothing special but it's a good start when you really can't be bothered... Keep adding ingredients if you want something more tasty to eat...

Haven't made this for ages but cooked it again tonight using sausage from the local butcher. Baked the sausages in the oven first, fried the garlic (2 big cloves) then added the chopped up cooked sausages. Followed recipe but added a good pinch of chilli flakes and seasoning to taste. So simple and very filling. Basil and Parmesan to taste at the end. Lovely simple meal! Serve with pasta. 5 stars for taste and simplicity 5 stars f

I used white wine, as the recipe suggests, rather than red as other cooks have recommended. I also added a second can of chopped tomatoes, together with a little paprika and a pinch of chilli flakes as recommended by others. It was rich, flavoursome and very satisfying. I would make it again.

Is the calorie count per serving or for the whole recipe? I.e. If we are having the ingredients because there are just two of us do we half the calories? Thanks

Hi sosman1983 the calorie count is per serving so if you were serving this recipe between 2 people you would be getting double the calories. All our recipe are calculated per serving unless otherwise stated. Hope this helps.

I am muslim so I used veggie sausages and used vegetable stock as a substitute for wine. I also used fresh chopped chilli when I added the garlic for a kick. I added about 5 sun dried tomatoes chopped to give an extra texture. And used dried oregano instead of fresh basil as I didn't have any. Although I tweaked the recepie quite a bit, it tasted great and was a hit with my husband and three year old.
