Ingredients

  • 3 Courgettes
  • 2 Large Leeks
  • 5 Closed cup mushrooms
  • Knob of Butter
  • Splash of Oil
  • Chopped Mint, Rosemary and Thyme
  • Bacon

Method

  • STEP 1
    Halve and slice the courgettes
  • STEP 2
    Halve and slice the Leeks
  • STEP 3
    Slice the mushrooms
  • STEP 4
    Melt the butter in a large frying pan, add a tiny splash of oil
  • STEP 5
    When hot, add the bacon to the pan, stirring till cooked
  • STEP 6
    Add the leek and Mushrooms, stirring till the mushrooms are just soft
  • STEP 7
    Add the courgette, continue stirring until just cooked
  • STEP 8
    Stir in the herbs, fry for a further 3 minutes
