  • 200g block feta cheese, crumbled
  • 8 flour tortillas
  • 140g sliced chorizo (about 24 slices)

Method

  1. Heat oven to 200C/180C fan/gas 6. Pierce the potatoes a few times each and put on a baking tray. Cook for 50 mins until really soft. Leave to cool slightly.

  2. Scoop the sweet potato flesh out of the skins into a bowl. Mash with the coriander, season and gently fold through the feta. This can be done earlier in the day – cover and keep in the fridge. Heat a large griddle pan.

  3. Spread the sweet potato mixture over half of each tortilla, top with chorizo slices and fold the other side over. Cook on the hot griddle pan for 3 mins each side until golden. Cut each tortilla in half and serve.

Perhaps you need to be a sweet potato lover but this seemed quite fussy for what turned out to be a lukewarm sandwich. Won't be making again.

I won't rate it as I tweaked the recipe a bit, but I did love it. Such a delicious, filling and minimalist meal! The change I made was to substitute the chorizo with small chopped up beef burger chunks (a worthy substitute for any of the other non-pork eaters out there). Also, the second time around, I added some lightly sauteed red onion slices as well which was lovely. Oh and I definitely advise cooking the sweet potatoes in the microwave rather than the oven; saves time and energy! For those who, like me, don't have a griddle pan, popping it under the grill works just as well and gives it a nice colour and crispiness.

These were surprisingly tasty, cheap to make, and wolfed down by the whole household, even my picky boyfriend who claimed not to like sweet potatoes previously! Will definitely be making these again, probably with other grab from a platter type morsels

Amazing and so easy! Would be good for parties or a family meal. Substituted coriander for thyme as I hate coriander. Think it might also be nice with spinach instead of chorizo as a veggie alternative.

Been making this since the recipe came out, it's a weekday supper favourite. The tang of the salty feta is a perfect contrast to the sweet potato. Yummy!

The salty tang of the feta against the sweetness of the sweet potato is heavenly and it is so quick to put together (as there is no work to do whilst the potatoes are baking.). This has become one of our favourite weeknight suppers with a fresh salad
