Method

  1. Simmer the onion and the curry paste with a splash of water for 5 mins in a large saucepan, stirring from time to time. Heat the milk in a jug in the microwave.

  2. Add the vegetables and quinoa, then stir in the milk. Bring to the boil, simmer gently for 10 mins until the quinoa is cooked. Check seasoning. Serve with warm naan bread.

I have been a vegetarian for many years. This is the worst recipe i have ever cooked . Do not cook this , unless you like really bland tasteless food. Can't believe how bad this is.

Really nice! Simple and quick with very little prep so perfect for a week night. I subbed 200ml of the milk for 200ml coconut milk and this added depth of flavour and made it feel very luxurious without increasing the calories too much.

I made an awful mistake which turned out quite nice, I used Balti sauce instead of paste and so halfway through added a few more tbsp of the jar and some mild curry powder, simmered the whole thing for an extra few minutes and it was delicious, will definitely try the original recipe another time but for now i'm quite happy with the result

I am shocked that a reputable source such as Good Food magazine could describe this as a "laksa" A laksa is a Malaysian dish consisting of a distinctive spice paste, coconut milk and noodles plus other ingredients A one pot Quinoa dish (has anyone in Malaysia ever tasted Quinoa? It comes from the Andes) made with Indian spice paste and dairy milk bears little resemblance to Malay cuisine It may be a nice quick one pot dish, but it is NOT a laksa

This makes for an incredibly speedy, healthy and satisfying dinner! I used a 450g bag of frozen mix veg and three cubes of frozen spinach, otherwise I kept all the other ingredients as stated in the recipe. I used Patak's mild spicy curry paste and got a lovely creamy consistency. Will make it again and again!

I made this with Almond milk instead of ordinary milk. I also added some chicken breast. I halved the ingredients and it was enough for 3 portions. I found it a bit too spicy (I only eat Kormas mind you.) so I'd reduce my Korma paste to 1tbsp next time. Wondering whether I can freeze my leftovers.... It was quite tasty and very quick and easy. Best of all it's quite healthy. I'll make it again. Will probably try it with rice just to experiment.

We loved this dinner! It satisfied us as well as an Indian takeaway! I fried the onion in a little oil, added 2 tbsp madras paste, then fresh carrot, mixed peppers and quorn pieces. I followed suggestions of half milk, half coconut milk. I forgot to hear the milk, but it didn't curdle. I did add the coconut a few minutes later, not sure of that made a difference( only because I'd forgotten to buy some and sent husband to shop!) I also forgot to buy flat bread, but found a great recipe: in food processor:- 250g sr flour, 250g yogurt, half tbsp of baking powder, sea salt, wizzed it, flattened it and dry fried on high heat in griddle pan- took 3 mins start to finish! All tasted delicious and a bonus that quinoa is a 'super food' :-)

Maybe it was because I had never cooked or tasted quinoa before but found this receipe totally bland. As always I read other users comments and did use coconut milk but still didn't work for me. One of the few recipies from this site that I wont be making again
