  • 300g long grain rice
  • 600ml hot vegetable or fish stock (from a cube is fine)
  • 1 tbsp korma curry paste
  • 100ml frozen peas

  • 3 tbsp low-fat crème fraîche

Method

  1. Tip the rice into a large microwavable container. Mix together the stock and curry paste, then pour over the rice. cover with cling film and pierce a few times with a fork. Microwave for 6 mins on High.

  2. Break the mackerel into large chunks and stir through the rice along with the peas and crème fraîche, then microwave for 6-8 mins more on medium until the rice is tender. Top with the eggs and serve sprinkled with the coriander.

Fantastic recipe! So tasty and easy. Took 6 mins then 8 (had it covered both times even though it doesn’t say to). I added lots of pepper to balance out the salt but it was really good!

Made this for the kids yesterday but didn't use the microwave. One child isn't keen on mackerel so gave him a whole egg and tried to avoid the fish flakes in his portion. But, he inevitably got a few bits and I now have a mackerel convert. This served a 5, 7 and 10 yr old with some leftovers which the 10 yr old polished off cold for lunch. Quick, easy and healthy

A very tasty combination, i made with cauli-rice for a low carb alternative. The ingredients list contains already boiled eggs, this skews the timings as, well, you have to boil and peel the eggs unless you happen to have left-overs.

This is a great hit with the family, although first time I made it I followed the recipe and used the microwave, but as others have commented it took a lot longer than the recipe states. So second time I cooked the rice the conventional way in a pan with the stock and paste and it was great. Would definitely recommend :-)

I made this in the rice cooker. Just mixed the curry paste with the gravy and used that instead of the normal amount of water I would put in. I covered the spinach and peas with boiling water to defrost / warm before stirring them through the rice. It was lovely and hubby loved it too!! He asked for more fish next time and I had to add extra curry paste as I couldn't taste it initially but it was so quick and easy to make! I'm already thinking up alternate versions with different meat / veg!

This took much longer to cook than the method said. I had to add more water as well.

I love this recipe but I normally only have basmati rice in the house. I find that with basmati I have to add 700 rather 600 mil liquid and cook the rice initially for 10 mins rather than 8. Thought this might be helpful for others in this situation.

Quick, delicious and a great way to eat mackerel. I used tikka paste. It only serves three as a main meal, unless served with a side.

This is delicious and super easy! My husband loves it (great as he wont eat much fish). I like LOTS of spring onions, coriander and fresh lemon juice in it.
