Method

  1. Melt the butter in a large pan, add the onions and courgettes, and cook for 5 mins on a medium heat, stirring occasionally.

  2. Add the tomatoes and flour. Cook for a couple of mins, stirring around to stop the flour from becoming lumpy. Add the turmeric and stock, cover and simmer for 30 mins.

  3. Purée with a stick blender, then sieve if you want a really smooth texture. Serve hot with crusty bread, if you like, or chill, then freeze for up to 2 months.

This is a nice soup, but I agree with the comments regarding reduce the amount of stock and add a bit of spice!

Only had a pound of courgettes and tinned tomatoes so adapted recipe adding a squeeze of garlic purée and half a tsp chilli purée and it turned out very nice indeed Can't think of anything else to make with future courgettes so will make this again and with homegrown tomatoes if they come..and I had no turmeric so used cumin

This has got to be up there with the worst soup ever! Bland, tasteless and watery. Threw this away, what a waste of ingredients. I give this no stars

This is just amazing! Its vegetarian, low fat/calories, adaptable to your preferences and delicious! Its great on a cold day as a comforting dinner or for hosting a get together with people with different dietary needs. love it! Mmmmmm!

Delicious indeed! But to summarise the hints below: 1. Add 2 chopped cloves garlic with the onions & courgette 2. Use 2 tbsp dried red lentils instead of flour 3. Use 1.5l stock with 2 cubes 4. Add 1 & 1/2tsp turmeric (and a wee bit of chilli!) 5. Serve with croutons, grated cheese, crème fraîche or greek yogurt. Scrum, healthy and easy to make!

A fantastic way of using up the glut of courgettes and tomatoes from my allotment. I have two batches stored in my freezer. As I am gluten free I made it with gluten free flour and have been eating the soup with gluten free cheese scones.

Really nice once I fiddled around with it after blending! 2 litres of stock is way too much-1.5 would be better and made with 1 extra stock cube. Also, I added garlic oil at the end for more taste but next time will add with the onions (should have read the other comments 1st!) Agree with adding more turmeric too but you can add that at the end like I did provided you simmer again for 15 minutes to cook it out. Already bought the ingredients to make it again as it freezes brilliantly too. Yum!

Made this today as trying to eat a little healthier. V easy to make and ingredients cheap. I did follow other peoples advice and added a little extra spice (garlic and chilli). I also only added 1.5l of stock as didn't want it too watery. verdict = good.
