  • 750g Desirée potato (about 3 medium large), peeled

  • groundnut oil, for drizzling
  • sea salt and freshly ground black pepper


  1. Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.

  2. Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.

Perfect chips! I used vegetable oil, added a sprinkling of paprika as well and served them with sour cream and burgers - amazing. My boyfriend couldn't believe i hadn't bought them.

Hahaha - some of the posts on this website do make me laugh - I honestly believe people just like to post to pretend they are a 'foody' In particular: "Best chips I have ever tasted ... Ramsey is a legend" Er... why? For simply putting his name on the same basic recipe for chips that EVERYONE else uses with nothing added or taken away? Its not a bad recipe, please dont misinterpret, but it is simply the way you cook chips - it is not unique or creative in any way.

Delicious! Made these using bog standard potatoes and they tasted amazing. 1000x times better than any shop bought chips.

This is a great recipe for oven chips. I find they can be a bit soggy but these were crispy and very tasty. Will be making these again

Livid!! The chips stuck to the base of my baking tray completely ruined!! What do you do to not make them stick??

These chips were a doddle to make and tasted delicious! Used a small amount of olive oil and mixed in a bowl with salt to make sure all the chips were covered and cooked for 25 minutes - fantastic results.

Great recipe and everyone loved them - needed cooking for longer than 20 mins though - more like 35-40. Well worth waiting for and won't be long before we try the spice ideas that have been suggested - cajun sounds good!

I make these a lot. Instead of the groundnut oil, try olive oil instead and add some chopped fresh rosemary. Mmmm...good!
