  • 500g frozen pea
  • 4 medium potatoes, peeled and cut into cubes

  • 1l hot vegetable stock
  • 300g pack fish finger (about 10)
  • 3 tbsp green pesto

Method

  1. Tip the peas and potatoes into a large saucepan, then pour in the stock. Bring to the boil and simmer for 10 mins, until the potato chunks are tender. Meanwhile, grill the fish fingers as per pack instructions until cooked through and golden. Cut into bitesize cubes and keep warm.

  2. Take a third of the peas and potatoes out of the pan with a slotted spoon and set aside. Blend the rest of the soup until smooth, then stir in the pesto with the reserved vegetables. Heat through and serve in warm bowls with the fish finger croûtons on top.

Delicious soup, and very cheap to make. I stirred in a little garlic cream cheese at the end and it gave it a delicious creamy swirl.

We love this in our house. Especially my 18 month old daughter who thinks its great. The soup is really good for taking to work the following day too (minus the fish fingers). A real family favourite.

Loved this soup, a meal in a bowl. Very quick and easy. Made the mistake of adding a bag of sugar snap peas I had to use up which made the end result rather stringy, will stick to podded peas next time.

This was delicious, looked just like the picture and possible the easiest soup I have made. Hubby was very impressed with the concept of fish finger croutons. Will make this again.

Delicious! I made this last night, when I saw the recipe I wasn't sure but decided to give it a go as the comments where so good. It was really lovely warming comfort food. The fish fingers are a must as they add a little something extra.

I made this for lunch today and agree with everyone that it is incredibly tasty. I think next time I make it I will add more stock as it was a bit thick and now it is cold, it looks a bit like baby food!
