Method

  1. Put the chicken breasts in a large, shallow roasting tray and drizzle with olive oil. Grill for 10 mins, then add cherry tomatoes and grill for another 5 mins until chicken is cooked. Drizzle pesto over the top and serve.

I prefer chicken thigh. Threw in some black olives and garlic cloves and served with rice and a spinach and rocket salad

Do you use chicken breast fillets for this recipe or bone-in chicken breasts?

We've just replaced our oven and the last one didn't have a grill. What temperature should the grill be on at? The grill defaulted to 200C when I switched it on, and after 10 mins, the chicken looked like someone had just breathed on it for a while, rather than 2/3's cooked.

A quick and easy supper which all the family enjoyed. I served with roasted vegetables and ciabatta bread.

Really tasty dish, easy too. I added in garlic as suggested and once the chicken was ready and plated up, I added cooked brown rice in with the tomatoes and garlic to soak up the tasty juices - then served all together. Will definitely make this again.

saw this online, read the reviews, quite honestly didn't beleive a word, but decided to cook it for lunch, could'nt beleive how something with so little ingredients could taste so fab ! two very usually talkative friends did'nt say a word they just ate ! must admit i did precook in oven and finished off under grill, but i have to say it WAS very very tasty, and all the cleaned dinner plates proved it... served it with croquet pots, sick to death of new pots crushed or otherwise, and a huge salad, went down a bomb ! this is a lunch / midweek dish tho, would not serve it for a dinner party.. give it a go !!!!

Really simple and quick to make but lovely flavours. Impressed the in-laws with this tasty supper! I use baby plum tomatoes with the stalks still on which make it look more rustic and serve with brown rice or cous cous to soak up the juices.

Something so simple could be sooo good! Don't skimp on the tomatoes, I needed a shedload. Possibly because the chicken breasts I bought were huge. Ohh, Momma!!! I served with crushed olive new potatoes. Variation: Used one commentator's suggestion, added garlic: Those garlic single cloves. Nip the lid off, same for the base. Peel, of course. Plonk 'em in the pan, and drizzle the olive oil over as the chicken. Same length of time. Like eating candy. Also, added a large pack of frozen spinach, which as we all know, turns out to be a small pack when cooked. Can't see how mushrooms would work with this. (Like Jamie Oliver's idea of roasting beet and carrots with this. It really needs sweet veg). Q. Anyone tried this with red pesto? -Andy

Does this recipe call for chicken breast FILLETS or bone-in chicken breasts? Also - skin on or off?
