  1. Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.

  2. Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

Made this evening.. It was ok. It definitely needs a spoon or 2 of creme fraiche stirred in at the end. I served with mash, would probably serve with pasta next time. I added 2 cloves of garlic and it probably still needed more. It was nice but I won't be in a rush to make it again to be honest.

This. Is. Deeeeeee. LISHOUS!!!!! Everyone in the family cleared their plates and wanted more (there wasn't any). Even my very fussy daughter proclaimed it to be "quite nice" (a higher accolade than you might think, considering the source). This will become a regular meal in our house.

I've cooked this dish twice now, just added a little more stock and peas but it has become another firm favourite. Very nice.

Very nice. Next time I will add more peas and maybe do some mashed potato with it.

yummy - I used what I had in so adapted slightly with chicken thighs with bones in, red onion instead of shallotts, chestnut mushrooms chopped, garlic cloves, bacon instead of pancetta and no peas. Served with cubed potatoes. Delish!

Absolutely superb, only thing I did different was add a couple of cloves of garlic with the onions, which were small shallots halved. Best chicken recipe we have tried for ages.
