Sliced aubergine deep fried in a spicy gram flour batter

- vegetable oil or corn oil
- 1 large aubergine
- 1 heaped cup of gram flour
- 1/2 tsp red chilli powder
- 1/2 tsp cumin
- 1/4 tsp salt
- 1tsp garam masala
Method
step 1
Put oil on to heat firststep 2
In a bowl, sift the gram flourstep 3
Add the red chilli powder, cumin, salt and garam masala. Mix wellstep 4
Add enough water to make the batter a medium consistencystep 5
Wash the aubergine, top and tail, slice thinlystep 6
Dip each slice into batter, so it is coated evenly, then place carefully into the oil. Cook until golden brown.step 7
Serve with mint youghurtstep 8
This snack can be eaten on its own or served with biryani :)
