Method

  1. Heat oven to 120C/fan 100C/gas ½. Pull any excess fat from the duck’s cavity and use a roasting fork or skewer to prick the skin of the duck all over – do this lightly as you don’t want to pierce the meat. Rub the duck generously inside and out with flaky sea salt, then lay, breast-side down, on a rack over a roasting tray. Roast the duck for 3 hrs, pricking again every now and then should you happen to pass by. While the duck is cooking, score a line gently around the middle of each apple and set aside (this stops them exploding when they cook).

  2. After 3 hrs, remove duck from the oven and turn the heat to 180C/fan 160C/gas 4. Sit the duck on a plate and carefully pour away most of the fat from the tin. Return the duck to the rack, right way up, and continue to roast for 30 mins. Put the apples in under the duck or around the side and roast for a final 30 mins. By now you should have the crispiest duck and apples on the verge of collapse. Leave the duck to rest for 10 mins, then carve and serve with the apples.

This was perfect! I've never made duck before but I followed the recipe (save for the apples) adding a little pepper and paprika when salting the duck. AMAZING! Used the duck fat to make roast potatoes and served as a roast dinner for three people.

This was my first go at duck and it was great! I didn't realise I ran out of sea salt so had to use normal table salt but still managed a moist bird with lots of crispy skin. A LOT of fat comes from the bird and I used that to make some great roasties!

Super easy recipe! I will definitely cook this again. I reduced the cooking time by putting for 130deg for 2hrs, drain the oil and juices add apples and continue to cook for another 30mins, turned the duck and roast for another 30mins with 180deg. I added some butter to the breast after I turned it to make it nicely brown and crispy!

Cooked this for the family. It was my first attempt at Duck and I was amazed how easy it was. Tasted delicious! Even my sceptical DIL raved about it.We were not sure about the apples though, we felt that they did not add anything to the duck.I'll definitely make this again

I used this recipe to cook duck for the first time on Christmas Day, it turned out really well and was very easy. I was able to get on with everything else and just leave the duck to do its thing.

Not sure where the star rating is when looking at the site on my iPad, but I'd give it FIVE. Very simple prep which resulted in a really juicy duck with lovely crispy skin.

Delicious!! I made a gravy from the giblet stock with the sticky bits in the pan once the duck was resting. Added a little bit of crab apple jelly to the gravy and some red wine. V.Good.

Just finished dinner of roasted duck and it was AMAZING! Alot of fat comes off the duck which is great for doing the veggies in!
