  1. Cook the potatoes in a large pan of salted water until just tender, about 10-15 mins. Meanwhile, whisk together the olive oil, mustard and lemon juice in a large bowl. Drain the potatoes and leave to cool for 5 mins, then tip into the bowl along with the spring onions. Toss everything until the potatoes are well coated. Leave to cool. The dish will keep in a covered container in the fridge for up to 2 days.

V. nice to have a potato salad without mayonnaise. Made when I was skint and went down really well.

A really simple way to make potatoes a bit special. Made a nice change to mayo and healthier too. Tasty hot or cold, perfect leftovers for the next day.

This salad has become a regular feature at BBQs now; what a fresh flavour! However, I tend to use juice from only half a lemon as the mustard is already pretty tangy and strong by itself.

simple, but really tasty, transforms the usual boring new potatoes! i served with chicken skewers, and other salads-went down brilliantly!

I LOVE this recipe and it always goes down a treat at BBQs and parties. Add some bacon lardons to make it even tastier.
