Method

  1. Mix half the lime zest and all the juice with the maple syrup and grated ginger. Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins. Heat the grill and line the grill tray with foil.

  2. Cook the sweet potatoes in salted boiling water for 10-12 mins until tender. Drain and mash well, adding the rest of the lime zest, plus some seasoning. Meanwhile, grill the chicken breasts for 10-15 mins, until cooked through and slightly caramelised.

  3. Heat the oil in a small frying pan. When it’s really hot, add the ginger matchsticks and fry for 1 min until the ginger is crisp. Lift out the matchsticks with a slotted spoon, then stir the mash into the gingerinfused oil. Divide the mash between 2 plates, top each with a chicken breast, scatter with the crisp ginger and serve with some sugar snap peas.

My other half wanted healthy food when trying to lose weight and everyone loved this recipe x I had never cooked with sweet potatoes before and now buy and use them on a regular basis just for a bit of variety and colour on the plate x Such an easy recipe as well

This was a nice dish as I really like the flavours of lime and ginger. I marinated the chicken overnight and had sliced the chicken into thin strips, and put some slits in them to soak up the flavours. It felt healthy to not have any cheese or milk added to the mash, as I usually do this with normal potatoes. I didn't have any peas or other veg to go with it sadly, as it was missing it! The ginger matchsticks were nice too. Will cook this again :-)

Nothing exactly wrong with this, but we were distinctly underwhelmed. Oil didn't flavour the sweet potato, and the glaze on the chicken didn't go at all sticky. Nice enough to eat, but not to make again or recommend.

Really nice, enjoyed it. I didn't have fresh ginger so substituted for ginger puree which I added straight to the marinade for the chicken. I also microwave sweet potatoes rather then boiling - prick the whole potatoes, add to a microwave bowl with some halved lime, cover with cling film and microwave on full for about 15 mins. Mash with a fork, squeezing the lime over and adding ginger puree - it worked well for me! The chicken was lovely, all sticky and flavourful.

Really tasty, I cut the chicken up into pieces which worked really well as it took on more flavour. Will defiantly make again.
