  • 400g penne (or other tube shape) pasta
  • 250g pack chestnut or button mushrooms, wiped clean
  • 8 rashers streaky bacon

  • 4 tbsp pesto (fresh from the chiller cabinet if possible)

  • 200ml carton 50% fat crème fraîche
  • handful basil leaves

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.

  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.

  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

This is a brilliant recipe, cheap and quick. Ideal for a mid week meal. The quantities are about perfect, although I do tend to use a whole typical jar size of pesto. Cherry tomatoes work well as an addition, but it works well with the few simple ingredients listed. Enjoy!

This one came out rather well! I just wish it hadn't tasted as similar to a bacon and mushroom risotto I made some time ago, but hey - it's got the same two main ingredients, so I guess it makes sense! My favourite pasta dish! My boyfriend always asks me to make it, so I'm guessing it's his favourite too. It's quick and easy, doesn't leave a tonne of washing up to do afterwards, yet so delicious and satisfying, both hot and cold. Thank you!

Very tasty, used single cream instead of creme fraiche as it was all I had in, will definitely make again, quick easy and yummy!

This recipe looks lovely but the diary free option is no good as there is cheese in pesto! Another suggestion would be great!

I made this quick and easy pasta dish for a family get together, serving it with a salad. It was a huge hit especially with my 13 year old grandson. He can be a picky eater, but had two helpings - a rare event. Even more amazing, he is learning about different types of pasta at school and had to take in a favourite recipe, and say why teenagers would like it. His comment was that it's the best pasta he'd ever had, and he's a teenager!

made this tonight, used red pesto and didnt add the creme fraiche as shop didnt have any. also added a garlic clove when frying the bacon and mushroom. this was one of the nicest pasta dishes i have had, really enjoyed it and will definitely be making it again
