Ingredients

  • 4 tomatoes (Cut in wedges)
  • half a cucumber (halved lenthways)
  • 1 green pepper (deseeded and cut into rings)
  • 1 onion (Peeled and cut into thinly sliced rings)
  • 110g reduced fat feta cheese (Cut into cubes)
  • 8 black olives
  • salt and freshly groound pepper
  • 4 tbsp fat free salad dressing
  • a bunch of flat leaf parsley (Chopped)

Method

  • STEP 1
    Arrange the tomatoes, cucumber, green pepper and onion in a serving dish. Top wiht the deta and olives.
  • STEP 2
    Season well and drizzle the dressing over the top. Sprinkle with the parsley and serve immediatley.
