  • 4 skinless, boneless chicken breasts
  • 25g garlic butter, softened

  • 25g crispy breadcrumbs

Method

  1. Place the chicken on a baking tray, rub with a little of the butter, season and cook under the grill for 15 mins, turning once until cooked through.

  2. Mix together the remaining garlic butter and breadcrumbs. Remove the chicken from the grill and top each breast with a smear of the breadcrumbed butter. Return to the grill and cook 3-5 mins until the breadcrumbs are golden and the butter melted. Serve any buttery juices, alongside new potatoes and peas or broad beans.

Made this for tea last night using quorn fillets as we are vegetarian. Used Olive spread instead of butter and did use extra brown bread crumbs. It tasted great, I scored the top of the quorn fillets to allow the garlic butter to sink in during cooking topped it with the garlic breadcrumbs then I popped them in the oven for 20 mins.

This has to be one of the yummiest dinners I have cooked! I did change it slightly and cooked the chicken in the oven and not the grill. Also as I was doing this for two people I adjusted the quantity accordingly. I made a couple of slits in each chicken breast first and pushed in a little of the garlic butter and seasoned. I then cooked the breasts on gas 6 for 20 minutes. I then took them out and spread the breadcrumb mixture on each one and cooked for a further 10 minutes until golden. The chicken was moist and delicious. I did cheat and bought lurpak garlic butter rather than make my own! The garlic was just the right amount. If anyone is on ww and looking to cook this then I have valued each chicken breast as 7 pro points.

loved this, served simply with new potatoes and green veg. Normal Kiev always seems to loose sauce when cooking and ends up rather dry - this stays really moist

Really quick and easy. I served it with a creamy potato gratin for a little extra indulgence, along with garden peas.

I cooked mine in the oven, not the grill...not sure if this recipe has confused the two as it says 'heat the grill' but then doesn't say to use it!! I also added more garlic butter and crushed a couple of garlics, and even then it wasn't overly garlicy - though still very tasty! I also made a small hole in the chicken before cooking and then pushed some of the garlic butter in to add extra taste to the middle of the chicken! Will definitely make again - lovely!
