Method

  1. Cook the quinoa following the pack instructions, then rinse in cold water and drain thoroughly.

  2. Meanwhile, mix the butter, chilli and garlic into a paste. Toss the chicken fillets in 2 tsp of the olive oil with some seasoning. Lay in a hot griddle pan and cook for 3-4 mins each side or until cooked through. Transfer to a plate, dot with the spicy butter and set aside to melt.

  3. Next, tip the tomatoes, olives, onion, feta and mint into a bowl. Toss in the cooked quinoa. Stir through the remaining olive oil, lemon juice and zest, and season well. Serve with the chicken fillets on top, drizzled with any buttery chicken juices.

I make extra as makes great lunchbox fillers for school and work. Replace the mint with either parsley or basil as hate mint. I also add extra olives as everyone loves them, but don't always add the feta

So tasty! I used chilli flakes instead of chilli, and added pomegranate seeds instead of black olives (as not a huge fan)

I made this on a whim as I had both quinoa and feta to use up... I'm so glad I did! I replaced the chilli with chilli flakes (as I didn't have any fresh in the house), completely omitted the oil as I used the George Foreman for the chicken, and also stirred the chicken and melted butter into the rest of the dish so I could segregate it into tubs for my lunches at work. Will definitely be making again!

This worked a treat. Cooked the quinoa for 18 mins then put lid on and stood whilst griddling turkey breast strips instead of chicken. Really tasty and filling and very easy so have saved to make again often!

Really delicious, and also added a little cumin which was delicious too (I love cumin with feta). For best results for cooking quinoa, simmer for 10 mins then leave to stand so don't over cook and get mushy quinoa. Good easy-cook quinoa method here www.lovequinoarecipes.com. What an easy, tasty and healthy dish! The chicken is absolutely amazing so juicy and tender! I added some yellow and red peppers to the quinoa and substituted the feta with goats cheese - served with a baked sweet potato! Scrumptious!!!

Just tried quinoa for the first time in our house so was a little worried the traditional meat and 2 veg lovers would turn their noses up...it went down a treat!!!! Really tasty and so easy. Can't wait to try some more of the recipes soon!!

I've made this a few times now and it's becoming a summer favourite. The combination of flavours is fantastic, and the meal really filling. I used the quinoa pouches which reduce the cooking time.

I swapped the mint and olives for basil avocado, because the former I hate, and the latter I love. I also don't eat chicken, so only had the salad, but cooked the full dish with chicken for my boyfriend. I found it fresh and delicious in the end, but initially a little bland. Had to go heavy on the lemon and chilli. Next time, I will probably add pine nuts for a bit of extra depth as, whilst the quinoa is nice, it loses it's not as nutty as, say, barley.
