Method

  1. In a large pan, heat the oil and cook the sausageballs until golden, moving them around in the pan frequently. Meanwhile, mix together the eggs, cheese and some seasoning with a fork in a jug.

  2. Cook the pasta following pack instructions. Add the broccoli for the final 3 mins, then drain, reserving a cup of the cooking water.

  3. Add the garlic to the sausageballs and cook for a couple mins more, being careful the garlic doesn’t brown. Remove the pan from the heat.

  4. Add the pasta and broccoli to the sausage pan. Toss everything together, then add the egg mixture. Stir the sauce through the pasta for 1-2 mins. The heat from the pan will cook the sauce – if it is too thick, use a little of the reserved cooking water to thin it. Divide between pasta bowls and serve with extra Parmesan, if you like.

This is a quick, easy midweek meal which the children love. I use normal sausages and use left over veg from the previous meal to make it more nutritious. I don’t add any oil as the sausage meat is fatty enough, so I just dry fry it.

This was one of the worst recipes I've had from this website. As anticipated the egg turned into scrambled egg and it was generally bland.

This isn't carbonara. It's sausage pasta. The creamy mess that is called carbonara isn't carbonara, so this is definitely not carbonara.

Good recipe, was looking for something different to do with sausages and already had all the ingredients. I used frozen Broccoli instead of fresh. Made for one so used one garlic clove, one egg and about 20g of Parmesan. I love garlic so I would add more next time, and needs plenty of salt and pepper.

I found it very good, but a bit dry. I'll add an extra egg next time, or maybe a bit of cream.

This is one of the worst recipes for carbonara I've seen. Carbonara without black pepper, is not carbonara. That's an essential ingredient.

In step 1 of the method it tells you to add seasoning to the sauce ingredients. I don't know about you Justin but in my book that means salt and black pepper!

Made it for the family last night who all said it was nice. I had a little taste but found it rather bland, but they all enjoyed it and would have it again. It was quick that is the main thing!!

Made this tonight for two, and as suggested by Frantic Flapjack, I still used 3 eggs and 50g of Parmesan and halved the other ingredients. I chose to steam the broccoli rather than add it to the pasta and this worked well. I personally found it a little bland so added more black pepper, but my boyfriend thought it was fine, so I guess it's just personal preference. Overall, a tasty quick and easy meal which is a great take on a classic.
