Ingredients

  • For the base
  • 200g almond biscuits
  • 50g melted butter
  • For the cream mixture
  • 4 limes, zest and juice
  • 4/5 tbsp rum
  • handful chopped mint
  • 200g cream cheese
  • 397ml sweetened condensed milk
  • 142ml double cream
  • Mint spriggs to decorate and grated lime

Method

    1. Crush the biscuits and mix with the melted butter
    2. Grease a push bottom cake tin with butter
    3. Push the biscuit mixture into the tin and leave in the fridge until rest of the mixture is ready
    4. Whisk together the cream cheese and the condensed milk, until smooth.
    5. Add the lime zest, juice and double cream and continue to whisk for a few minutes.
    6. Stir in the rum (according to taste)
    7. Spoon the mixture over the biscuit base and leave overnight in fridge.

I made a really similar cheesecake to this but I used digestive biscuits and cream cheese instead of almond ones and cottage cheese. I've never used almond biscuits for a cheesecake, does it make a big difference? My recipe is here www.blollings.blogspot.com.es/2015/02/blollings-cooks-easiest-ever-and-most.html :)

Well I've just made this cheesecake and I'm very excited to taste it. However I'm a bit worried about it setting!! Please reassure me that it will set or do I need to give my guests a spoon and we all tuck in?!

Not sure how this is going to turn out because I didn't know when to add the mint (I added with the lime etc), came to do the washing up and it was all stuck to the whisk so I'm guessing it should be stirred in at the end with the rum. will rate tomorrow after tasting
