Method

  1. Heat oven to 200C/fan 180/gas 6. Boil potatoes for 7 mins, then drain well. Tip into a large bowl with the onion, mustard and olive oil. Toss well to coat and transfer to a roasting tin. Roast for 30-35 mins until the mustard forms a golden crust. Toss gently in the tin and serve with the chicken.

Absolutely gorgeous!! I didn't have enough wholegrain mustard so I used half wholegrain and half dijon and it was a lovely dish. Me and my other half would have been quite happy with just a plate full of the potatoes!

I served these with smoked fish and cherry tomato rarebit. They were absolutely delicious and my friends who came to dinner ate every one. I used cooking onions as I didn't have a red onion and they were fine. The mustard was not overpowering.

These are delicious, I wasn't sure how tasty they would be with so few ingrediants but they were simple to make and taste great! Will be making again!

When I first read this recipe I thought that it was too much mustard but once the potatoes are cooked and crisped they are delicious. Goes beautifuly with the Tarragon chicken recipe.
