Ingredients
- 4 eggs
- 225g self raising flour
- 225g butter
- 225g sugar
for the filling
- 3 tblsp jam
- 3 tblsp double whipped cream
Method
- STEP 1mix the butter and the sugar together in a bowl and add one egg at a time whisking
- STEP 2sieve the flour into the mixture and fold in with a spoon
- STEP 3greese the two 17inch cake tins and distribute the mixture betweeen the two
- STEP 4bake for 20-30 minutes on 180/gas mark 4
- STEP 5whisk the cream until thick and spread over the cool sponge and then finally the jam
