Ingredients

  • 4 eggs
  • 225g self raising flour
  • 225g butter
  • 225g sugar

for the filling

  • 3 tblsp jam
  • 3 tblsp double whipped cream

Method

  • STEP 1
    mix the butter and the sugar together in a bowl and add one egg at a time whisking
  • STEP 2
    sieve the flour into the mixture and fold in with a spoon
  • STEP 3
    greese the two 17inch cake tins and distribute the mixture betweeen the two
  • STEP 4
    bake for 20-30 minutes on 180/gas mark 4
  • STEP 5
    whisk the cream until thick and spread over the cool sponge and then finally the jam
